Horse Gram in Ayurveda
Horse gram or Kulthi (Botanical name – Macrotyloma uniflorum ) is widely consumed in South India. These lesser known beans are used in curries and soups. Texts of ayurveda refer these beans as Kulatthika or Kulattha. The soup of these beans is used in diet, after panchakarma treatment.
Ayurveda Health Benefits of Horse Gram or Kulthi
Ayurveda acharyas praise medicinal properties, health benefits and uses of horse gram as follows.
Kulattha or horse gram is spicy to taste (katu rasa). Its taste becomes astringent (kashaya rasa) after digestion. It is hot in potency (ushna veerya). It is light to digest (laghu), increases pitta dosha and Rakta (blood).

Scientists from the Indian Institute of Chemical Technology have found that unprocessed raw horse gram seeds not only possess anti-hyperglycemic properties but also have qualities which reduce insulin resistance. (1)
Describing horse gram (Ulavalu in Telugu, Kulthi in Hindi, Kollu in Tamil) as a poor man’s pulse crop in South India, Dr.Tiwari said it was an anti-oxidant rich food grain. Traditionally different preparations were made with the pulse to suit the requirements of different seasons. For instance, it was given in the winter for generating body heat/warmth and energy.
Dr.Tiwari said the study found that raw horse gram seed was rich in polyphenols, flavonoids and proteins, the major anti-oxidants present in fruits and other food materials.
Anti-oxidants help in controlling oxidative stress by scavenging free radicals. He said the study found that raw horse gram seed has the ability to reduce post-prandial hyperglycemia by slowing down carbohydrate digestion and reduce insulin resistance by inhibiting protein-tyrosine phosphatase 1 beta enzyme.
He said that of late a belief has gained ground that eating sprouts of horse gram would be beneficial for health. However, the study found that during sprouting its anti-diabetic medicinal property gets reduced.
He said the majority of anti-oxidant properties were confined to the seed coat and its removal would not do any good. “Any preparation made of whole grain is better than sprouts or horse gram pulses”, he added.

How to use horse gram or Kollu powder for weight loss
Take 2 cups of horse gram and dry roast it till the raw flavour is gone. Allow the roasted bean to cool. Powder the roasted beans in a mixer. Store it in a airtight container. This can be used to prepare soups.
Horse Gram Soup for weight loss:
Ingredients : (Serves two)
- Powdered roasted horse gram – one and half table spoon

- 4 cloves of garlic – crushed. (Read Garlic Milk Health Benefits and Recipe )
- ½ inch ginger – grated (Read Ayurveda Health Benefits of Ginger)
- Ghee – 1 tea spoon (Read.Properties of ghee or clarified butter as described in Ayurveda )
- 5-6 pepper corns – crushed
- Coriander leaves – ½ table spoon

Heat ghee in a wok add onions and fry till they become transparent. Add garlic and ginger fry till they lose rawness. Add water and bring it to boil. Add Horse gram powder and stir well till it is cooked . Do not allow it to form lumps. Sprinkle salt, pepper and coriander leaves. Garnish with coconut milk and serve.
This Horse Gram Soup Recipe is best to lose weight and can be used before lunch. It almost fills the stomach, reduces hunger pangs and prevents craving.
Sprouted Horse Gram Usali or Salad :
The nutritional contents of these beans, like very little carbohydrate, more protein and fiber, contribute to weight loss
Horse Gram – 1 cup
Onion – 1 large finely chopped ( Read Home Remedies with Onions )
Coriander Leaves – finely chopped 1 table spoon
Grated coconut – ¼ cup (Read Count on Coconut )
Lemon juice – 1 tea spoon
Water – Quantity sufficient (Read water the Elixir of Life )
Mustard seeds – ½ tea spoon ( Men Beware Mustard Can Kill Sperms )
Urad dal – ½ tea spoon (Read Black Gram or Urad Dal Soup Recipe for Men )
Chana dal – ½ tea spoon
Curry Leaves – 9 to 10
Green Chilli – 2 – finely chopped
Asafoetida – 1 pinch
Cooking oil – 3 tea spoon
Wash and soak horse gram for 8 hours. Discard the water and place it in a colander or Chalni for 30 minutes to remove residual water. After this tie the beans in a clean muslin cloth and hang it in a dark place for 12 hours. This process makes the kulthi to sprout.
Pressure cook sprouts in 4 cups of water with little salt. Separate cooked beans from water. (This water can be used in curries and soups.).
Heat a wok with cooking oil in it. Add mustard seeds. When they splutter add urad dal, channa dal, curry leaves, green chillies and asafoetida. Roast them well. Add Chopped onions and fry till the raw smell is gone. Now add cooked sprouts and coconut gratings. Turn all these ingredients so that everything gets mixed evenly. Turn off the flame and add lemon juice. Garnish this with coriander leaves before serving.
This Horse gram recipe helps in weight loss and can be eaten with rotis and rice. It can be eaten as healthy snack. This is very low in calories and satiates hunger.
Horse Gram Curry using horse gram water :
Horse gram – 1 cup
Grated coconut – 1 cup
MTR Rasam Powder – 3 tea spoon
Tamrind paste – 3 tea spoons

Curry leaves – 8-10
Coriander leaves – ½ table spoon
Cumin seeds or Jeera – ½ tea spoon (Read Health Benefits of Cumin Seeds )
Coriander seeds or dhania seeds – ½ tea spoon
Turmeric – ¼ tea spoon (Read Benefits of Drinking Turmeric Milk )
Salt to taste
Mustard seeds – ½ tea spoon
Dry Red chilli – 2 broken

Asafoetida – 1 pinch
Soak horse gram overnight . Next day discard the water used for soaking. Wash soaked horse gram and pressure cook it for 5 whistles with little salt and 4 cups of water.
Grind grated coconut, rasam powder , coriander seeds (dhania), cumin seeds , turmeric along with one table spoon of cooked horse gram along with little water to make a fine paste. Add this to cooked kulthi beans and adjust the consistency by adding water. Boil till the raw smell of masala goes. Now add tamarind paste , salt, curry leaves, finely chopped coriander leaves and jaggery. Boil for 3 more minutes. Turn off the flame.
Heat ghee in a small tadka pan, add mustard . When it splutters add red chillies and asafoetida. Turn off flame and pour this on prepared curry. This curry goes good with rice or ragi ball. Savouring this with ragi ball help to lose weight fast as these stay in stomach for a very long duration.

100 grams of dry horse gram beans contain 57.2% of carbohydrate , 22% protein , 5.3% dietary fiber, 0.5% fat, 287 mg calcium, 311 mg phosphorus , 6.77 mg iron .
Horse Gram Protein :
Horse gram contains high protein. 22% of this bean is protein. Hence this is recommended for a weight loss diet. Low fat content in this bean makes it a favourable protein supplement for vegans and vegetarians. Usually this bean is included in diet of body builders in rural India as it is cheap and easily affordable. This bean is fed to race horses for its high protein content and it also prevents horse from gaining weight. Due to its high protein content , horse gram is strictly forbidden in Ayurvedic diet for gout or high uric acid .
How to use Horse gram
Horse gram has to be soaked overnight and the water has to be discarded. These soaked beans have to be pressure cooked next day to use in curries and soups.
- Always soak horse gram overnight before cooking.
- Discard soaked water as it contains phyto chemicals which disturb digestion.
- Use only cooked horse gram. Never eat it raw as it is very hard to digest.

Who should not use horse gram
Pregnant women, persons who are recovering from tuberculosis, people who are willing to gain weight should not use horse gram. Persons with gout and high uric acid level, kidney malfunction should not use this legume
