Horse gram (Macrotyloma uniflorum ) is a bean which is widely used in India specially in south India. It is also known as KULTHI or KULTHI DAL in hindi. This bean is high in protein , calcium, phosphorus and iron. Various Horse gram recipes help to lose weight. People who are on weight loss diet can use this bean often to lose weight fast. Based on principles of Ayurveda the medicinal properties of Kulthi dal are explained as follows.
This bean normalises aggravated Kapha and Vata. It is light to digest and increases pitta. Ayurveda acharyas praise this bean as “medhohara” which means it reduces body fat. Hence horse gram is considered as best weight loss food.
Horse Gram Recipes for Weight Loss
Horse Gram Soup:
Take 2 cups of horse gram and dry roast it till the raw flavour is gone. Allow the roasted bean to cool. Powder the roasted beans in a mixer. Store it in a airtight container. This can be used to prepare soups.
Ingredients : (Serves two)
- Powdered roasted horse gram – one and half table spoon

- 3-4 cloves of garlic – crushed. (Read Garlic Milk Health Benefits and Recipe )
- ½ inch ginger – grated (Read Ayurveda Health Benefits of Ginger)
- Ghee – 1 tea spoon (Read.Properties of ghee or clarified butter as described in Ayurveda )
- 5-6 pepper corns – crushed
- Coriander leaves – ½ table spoon
- Coconut milk – ¼ cup (Optional) (Read Home Remedies with Coconut )

Heat ghee in a wok add onions and fry till they become transparent. Add garlic and ginger fry till they lose rawness. Add water and bring it to boil. Add Horse gram powder and stir well till it is cooked . Do not allow it to form lumps. Sprinkle salt, pepper and coriander leaves. Garnish with coconut milk and serve.
This Horse Gram Soup Recipe is best to lose weight and can be used before lunch. It almost fills the stomach, reduces hunger pangs and prevents craving.
Sprouted Horse Gram Usali or Salad :
Horse Gram – 1 cup
Onion – 1 large finely chopped ( Read Home Remedies with Onions )
Coriander Leaves – finely chopped 1 table spoon
Grated coconut – ¼ cup (Read Count on Coconut )
Lemon juice – 1 tea spoon
Water – Quantity sufficient (Read water the Elixir of Life )
Mustard seeds – ½ tea spoon ( Men Beware Mustard Can Kill Sperms )
Urad dal – ½ tea spoon (Read Black Gram or Urad Dal Soup Recipe for Men )
Chana dal – ½ tea spoon
Curry Leaves – 9 to 10
Green Chilli – 2 – finely chopped
Asafoetida – 1 pinch
Cooking oil – 3 tea spoon
Wash and soak horse gram for 8 hours. Discard the water and place it in a colander or Chalni for 30 minutes to remove residual water. After this tie the beans in a clean muslin cloth and hang it in a dark place for 12 hours. This process makes the kulthi to sprout.
Pressure cook sprouts in 4 cups of water with little salt. Separate cooked beans from water. (This water can be used in curries and soups.).
Heat a wok with cooking oil in it. Add mustard seeds. When they splutter add urad dal, channa dal, curry leaves, green chillies and asafoetida. Roast them well. Add Chopped onions and fry till the raw smell is gone. Now add cooked sprouts and coconut gratings. Turn all these ingredients so that everything gets mixed evenly. Turn off the flame and add lemon juice. Garnish this with coriander leaves before serving.
This Horse gram recipe helps in weight loss and can be eaten with rotis and rice. It can be eaten as healthy snack. This is very low in calories and satiates hunger.
Horse Gram Curry :
Horse gram – 1 cup
Grated coconut – 1 cup
MTR Rasam Powder – 3 tea spoon
Tamrind paste – 3 tea spoons
Jaggery – 1 tea spoon ( Read Ayurveda Medicinal Properties of Jaggery )
Curry leaves – 8-10
Coriander leaves – ½ table spoon
Cumin seeds or Jeera – ½ tea spoon (Read Health Benefits of Cumin Seeds )
Coriander seeds or dhania seeds – ½ tea spoon
Turmeric – ¼ tea spoon (Read Benefits of Drinking Turmeric Milk )
Salt to taste
Mustard seeds – ½ tea spoon
Dry Red chilli – 2 broken
Ghee – 1 tea spoon ( Read Does Ghee increase Blood Cholesterol ? )
Asafoetida – 1 pinch
Soak horse gram overnight . Next day discard the water used for soaking. Wash soaked horse gram and pressure cook it for 5 whistles with little salt and 4 cups of water.
Grind grated coconut, rasam powder , coriander seeds (dhania), cumin seeds , turmeric along with one table spoon of cooked horse gram along with little water to make a fine paste. Add this to cooked kulthi beans and adjust the consistency by adding water. Boil till the raw smell of masala goes. Now add tamarind paste , salt, curry leaves, finely chopped coriander leaves and jaggery. Boil for 3 more minutes. Turn off the flame.
Heat ghee in a small tadka pan, add mustard . When it splutters add red chillies and asafoetida. Turn off flame and pour this on prepared curry. This curry goes good with rice or ragi ball. Savouring this with ragi ball help to lose weight fast as these stay in stomach for a very long duration.

- Always soak horse gram overnight before cooking.
- Discard soaked water as it contains phyto chemicals which disturb digestion.
